bhojan ko suvaas banaane, rangane ya sanrakshit karne ke uddeshya se usamein milaae jaane vaale sookhe beej, fal, jad, chhaal, ya sabjiyon ko 'masaala (spice) kehte hain. kabhi-kabhi masaale ka prayog doosare flevar ko chhupaane ke liye bhi kiya jaata hai.

masaale, jadi-bootiyon se alag hain. pattedaar hare paudhon ke vibhinn bhaagon ko jadi-booti (harb) kehte hain. inka bhi upayog flevar dene ya alankrut karne (garnish) ke liye kiya jaata hai.
