Bhaarat ke graameen ilaakon mein gud ka upayog cheeni ke sthaan par kiya jaata hai. gud lohatatv ka ek pramukh srot hai aur raktaalpata (eneemiya) ke shikaar vyakti ko cheeni ke sthaan par iske sevan ki salaah di jaati hai. gud ke ek anya hindi shabd jaagari ka prayog angreji mein iske liye kiya jaata hai.

gud kai prakaar aur aakaar ka hote hue bhi vastut: ek hi padaarth hai. ikh se praapt ikh ka gud evam taad se praapt taad ka gud kaha jaata hai, par ikh se praapt gud itna prachalit hai ki ise log keval gud hi kehte hain. iske vipreet bhi gud ka kai tarah se vargeekaran kiya ja sakta hai, jaise saaf kiya hua gud evam bina saaf kiya hua gud, chhoti pindiyon evam badi pindiyonvaala aadi. rakh diye jaane par, arthaat puraana hone par, iske gunon mein parivartan hota jaata hai. isaliye naya gud, evam puraana gud is bhaaainti bhi upayog mein iska vivran aata hai.

gud udyog

gud udyog Bhaarat ka bahut puraana udyog hai tatha jahaaain jahaaain ikh paida hoti hai, yeh udyog kaafi prachalit hai. uttar pradesh mein ghi udyog ke baad isi ka sthaan hai. krushak swayam hi puraane dhang se gud banaate hain. dakshin Bhaarat mein bhi yeh udyog bahut prachalit hai. yahaaain par gud ikh ke ras ke atirikt taad ke ras, ya meethi taadi se bhi banaaya jaata hai. yeh ras in pedon se, vishesh kar greeshm ritu mein niklata hai. ab to Bhaarat ke sabhi pradeshon mein, jahaaain ye vruksh paae jaate hai, taad-gud-udyog ko kaafi protsaahan diya ja raha hai.

gud banaane ki vidhiyaaain

isko banaane ke liye lohe ke uthale kadhaahon mein ganne ke ras ko bhar kar ubaala jaata hai. ubaalate samay ise lagaataar hilaaya jaata hai aur ismein ashuddhiyaan nikaalne aur iske gunon mein vruddhi ke liye vibhinn vastuen milaayi jaati hain. samay ke saath ras ka paani ud jaata hai aur bache hue ardh thos gud ko saaainchon mein daal kar vibhinn aakaaron mein jama diya jaata hai.

ikh ke ras se

(k) ikh se ras nikaalna: deshi kolhoo ke dvaara lagbhag 60-65 pratishat ras niklata hai. yeh ras bade-bade kadaahon mein daala jaata hai. daalte samay kapde se ras chhaan liya jaata hai, tab yeh ras ubaala jaata hai.

(kh) ras ki safaai : ras ko saaf karne ke liye praaya: choone ka upayog kiya jaata hai. choona ras mein upasthit kaarbanik amlon tatha anya apadravyon se mil kar raasaayanik parivartan karta hai. proteen ke anu bhi ras ke garam hone par ek doosare se paraspar milkar avakshipt ho jaate hain. ye sab ras ke oopar aakar lagbhag aadha inch se lekar ek inch tak moti tah banaate hain. inmein ras ke adhikaansh apadravya rahate hain. inhein lohe ke bade chammachon se alag kar lete hai. choone ke atirikt vishesh prakaar ke bane koyale, ghaas aadi ka bhi upayog apadravyon ko door karne ke liye kiya jaata hai. apadravyon ko alag karne ke pashchaat ras ko ubaalate hain. isse ras ka jal bhaap bankar udta jaata hai. jab ras ka chauthaai bhaag rah jaata hai tab chaashni (syrup) kaafi gaadhi ho jaati hai aur ismein manibh banane ke lakshan dikhaai dene lagte hain. tab chaashni ko khule bartanon mein ek dedh inch mote star mein daal dete hain. jab yeh thoda garm hi rahata hai tab, jab tak ardh thos na ho jaae, lakdi ke bade chammachon se chalaate hain. fir ya to bade bade saaainchon mein daal dete hain ya haath mein lekar chhoti-chhoti bheliyaaain (pindiya) banaate hain.

taad ke ras ya meethi taadi se gud banaana

pashchim Bengal mein khajoor se meethe ras se gud banaaya jaata hai.

taadi se gud banaane ki vidhi lagbhag ikh ke ras se gud banaane ki bhaaainti hi hai. ismein apadravya kam hote hain. at: unhein chhaaaintane ke liye choona ityaadi dene ki aavashyakta naheen padti. ikh ke gud ki apeksha ismein glookoj ki maatra adhik hoti hain evam cheeni ki kam. vitaamin bhi ismein adhik rahata hain. at: svaasthya ki drushti se yeh ikh ke gud se adhik laabhakaari hai.

gud ke gun par mitti, khaad aadi ka prabhaav-yadi mitti mein vileya lavanon ki maatra adhik rahe to usamein paida hone waali ikh ka gud praaya: achha naheen hota. yeh adhik bhoora evam jal sokhane wala hota hai tatha varsha ritu mein paseejata hai aur halaka kaala bhoora sa hota hai. usaki mithaas mein bhi ek prakaar ka khaaraapan rahata hai. jis ikh ki sinchaai hoti hai usaka gud itna svaadisht evam dekhne mein achha naheen hota jitna baraani (bina sinchaai ke) ikh ka hota hain. kintu kisi kisi mitti par sinchaai ka prabhaav gud ke gunon par achha bhi hota hai.

upayog

gud upayogi khaadya padaarth maana jaata hai. iska upayog Bhaarat mein ati praacheen kaal se hota aa raha hai. Bhaarat ki saadhaaran janta iska vyaapak roop mein upayog karti hai tatha yeh bhojan ka ek aavashyak vyanjan hai. ismein kuchh aise paushtik tatv vidyamaan rahate hain jo cheeni mein naheen rahate. svachh cheeni mein keval cheeni hi rahati hain, par gud mein 90 pratishat ke lagbhag hi cheeni rahati hai. shesh mein glookoj, khanij padaarth, vitaamin aadi svaasthya ki drushti se upayogi padaarth bhi rahate hain. ayurvedik davaaon tatha bhojya padaarthon mein vibhinn roopon mein iska upayog hota hai.

gud ke anya prakaar

gud ka choorn roop shakkar kahalaata hai aur Punjab, Haryana, Delhi aur pashchimi uttar pradesh mein iska sevan lagbhag pratyek graameen ghar mein kiya jaata hai. gud ganne ke atirikt khajoor se bhi banaaya jaata hai. khajoor ka gud Bhaarat mein mukhyat: pashchim Bengal aur iske aas paas ke kshetron mein prachalit hai. ise taal gud bhi kehte hain.

masaale wala gud
