aisa koi bhi padaarth jo sharkara (carbohydrate), vasa, jal tatha/athva proteen se bana ho aur jeev jagat dvaara grahan kiya ja sake, use bhojan kehte hain. jeev na keval jeevit rahane ke liye balki svasth aur sakriya jeevan bitaane ke liye bhojan karte hain. bhojan mein anek poshak tatv hote hain jo shareer ka vikaas karte hain, use svasth rakhate hain aur shakti pradaan karte hain.

bhojan ke vividh avayav

bhojan mein paae jaane vaale aavashyak tatv hain - carbohydrate, proteen, vasa aur tel, vitaamin aur khanij. iske atirikt bhojan mein sabhi poshak tatv hone chaahiye ; arthat maansapeshiyon aur uttkon ko sabal banaane ke liye proteen, oorja ya shakti pradaan karne ke liye carbohydrate aur vasa, majaboot hadidayon aur rakt ke vikaas ke liye khanij lavan aur svasth jeevan evam shaareerik vikaas ke liye vitaamin.

shareer mein vibhinn poshak tatvon- carbohydrate, proteen, vasa, vitaamin aur khanij ki aavashyakta manushya ki aayu, ling, shaareerik shram aur shareer ki dasha par nirbhar karti hai. shaareerik shram karne vaale ek majadoor ko daftar mein kaam karne vaale vyakti ki apeksha shakti pradaan karne vaale bhojan ki kaheen adhik aavashyakta hoti hai. garbhavati auraton aur stanapaan karne vaale bachchon ki maataaon ko shaareerik parivrtanon ke kaaran adhik proteen aur khanijon ki aavashyakta hoti hai.

carbohydrate tatha vasa yukt bhojan ko shaktidaayak bhojan kehte hain. daalein, kandamool, sookhe meve, cheeni, tel aur vasa is varg mein aate hain.

shareer-nirmaan karne vaale bhojan:

adhik proteen wala bhojan shareer nirmaan karne wala bhojan kahalaata hai. bhaarateeya nasl ki deshi gaaya ka dudh, ghrut, daalein, tilhan, giri aur kam vasa vaale tilhanon ke utpaad is varg mein aate hain. prroin hamare sharir k atyant aavaashayak tatv hai maaains, machhali, ande bilkul na lein |

sanrakshan dene vaale bhojan :

jis bhojan mein proteen, vitaamin aur khanij adhik paaye jaate hain use sanrakshan dene wala bhojan kehte hain. doodh aur doodh ke utpaad, ande, kaleji, hari pattedaar sabjiyaaain aur fal is varg mein aate hain.

poshakon ke kaarya aur unke srot :

proteen :

shareer mein uttakon, maansapeshiyon aur rakt jaise mahatvapoorn dravyon ka nirmaan, sankraman ka saamana karne ke liye injaaim aur rog pratikaarak tatvon ke vikaas mein sahaayata.

srot :- taaja ya sukhaaya hua doodh, paneer, dahi, tilhan aur giri, soyaabeen, khameer, daalein, maans, kaleji, machhali, ande aur anaaj.

vasa :

shakti ke sankeindrat srot ka kaam karna aur ghulanasheel vitaaminon ki poorti karna.

srot : makkhan, ghi, vanaspati tel aur vasa, tilhan aur giri, machhali ka tel aur ande ki jardi.

carbohydrate :

shareer ko shakti pradaan karna.

srot : anaaj, baajara, kandamool jaise ki aaloo, chukandar, arabi, tepioka aadi aur cheeni tatha gud.

vitaamin

vitaamin A :

shareer ki chamadi aur shleshm jhilli ko svasth rakhana aur raatri andhata se bachaav.

srot : machhali ka tel, kaleji, doodh ke utpaad -dahi, makkhan, ghi- gaajar, fal aur pattedaar sibjayaan.

vitaamin bi 1 (thaayaamin)

saamaanya bhookh, paachan shakti tatha svasth snaayu pranaali aur bhojan ki sharkara ko shakti mein badalna.

srot : kaleji, ande, faliyaan, daalein, giri, tilhan, khameer, anaaj, sela chaaval.

vitaamin bi-2 (riboflevin) :

koshikaaon ko aakseejan ke upayog mein sahaayata dena, aankhon ko svasth aur saaf rakhana tatha naam munh ke aaspaas papadi na jamane dena tatha munh ke koron ko fatne se bachaana.

srot : doodh, sapareta, dahi, paneer, ande, kaleji aur pattedaar sibjayaan.

niyaansin

chamadi, pet, antidyon aur snaayu tantr ko svasth rakhana.

srot : daalein, saabut anaaj, maans, kaleji, khameer, tilhan, giri aur faliyaan.

vitaamin si :

koshikaaon ko majaboot banaana, rakt vaahik ki bhittiyon ko shaktishaali banaana, sankraman ki rokathaam aur rog se jaldi mukti paane ki shakti pradaan karna.

srot : aanvala, amarood, neenboo ki jaati ke fal, taaji sibjayan aur ankurit daalein.

vitaamin di :

shareer ko kaafi maatra mein kaiilshayam grahan karne aur haddi majaboot banaane mein sahaayata deta hai.

srot : doodh, makkhan, ande ki jadeeZ, doodh, paneer, machhali, tel aur ghi.

kailshiym aur faasforas :

hadidayaan aur daant banaane, rakt badhaane tatha peshiyon aur naaidyon ko theek roop se kaam karne mein sahaayak hota hai.

srot : doodh aur iske utpaad, pattedaar sibjayaan, chhoti machhali aur anaaj aadi.

lauhatatv :

proteen ke saath milkar heemoglobeen (rakt mein ek laal padaarth jo koshikaaon mein aakseejan le jaata hai) banaana.

srot : kaleji, gurda, ande, sibjayaan, tilhan-giri, faliyaan, daalein, gud, sookhe meve aur pattedaar sibjayaan.
